BIIAB launches catering award
The British Institute of Innkeeping’s (BII) awarding body (BIIAB) has launched its proposed Essentials in Catering Award (ECA).
The ECA comprises three levels and the first includes basic skills such as personal hygiene; work clothing; basic knife skills; storage and preparation of food; food presentation and use and cleaning of basic kitchen machinery.
The course is available from 1 June and will cost £15 each for the workbook and assessment.
Cathie Smith, director of BIIAB, said: “With the forthcoming smoking ban getting closer, pubs are looking at expanding or introducing a food offering to broaden their appeal and attract new customers.
“This award is not aimed at people who want to be the next Jamie Oliver, but to teach the basic skills to those new to food preparation. It is delivered through a workbook in the workplace and enables people to learn on the job.”
ECA was developed in conjunction with consultant Nick Taylor-Guy – former director of human resources of Ubon by Nobu.
