Celebrity chef Gordon Ramsay is expanding his Maze restaurant portfolio into Cape Town, South Africa, as part of the new OneandOnly resort on the Victoria & Alfred Waterfront.

Due to open in May 2009, the restaurant would be the fourth in the Maze portfolio accompanying sites at London's Marriott Grosvenor Square hotel, New York and Prague. A fifth site is expected to launch in Melbourne, Australia, in February 2010 under the management of Gordon Ramsay Holdings. The 140-cover Maze Cape Town restaurant will join the debut of Nobu, a Japanese restaurant group, in the Africa at the 131-room OneandOnly resort, expected to fully open in September 2009.

The resort will also include two landscaped islands, one featuring 40 suites and the other a 1,200sq m (3,937sq ft) spa with 11 treatment rooms, sauna and steamrooms, two 18sq m (59sq ft) vitality pools and full-service salon. The will also be a 200sq m (656sq ft) Technogym-equipped fitness suite and a infinity edge pool.
