Yo! Sushi flagship gets refurbishment
Yo! Sushi on Poland Street – the chain’s original flagship site – is undergoing a £600,000 refurbishment before reopening at the end of next month (March).
The interior of the 2,400sq ft site will be refurbished and the menu will also be updated.
Architects Dryburgh Gillian Associates have redesigned the interior to create a more ‘integrated and intimate dining experience’. While the 43m double conveyor belt will remain, seating will become a mixture of booths and stools.
A new range of plate and glassware will be introduced and ‘gadgetry’ which featured in the old restaurant – call buttons, talking robots and moving coloured lights – will be removed to created a more ‘sophisticated’ experience.
“The refurbishment of our Poland Street site marks another remarkable step forward for Yo! Sushi,” said Robin Rowland, CEO.
“Following the investment from Primary Capital we are now in position to develop the brand both in the UK as well as internationally, refining the concept to meet each restaurant’s individual market needs.”
The chain, which currently operates 15 restaurants and two Yo! Below bars in the UK, aims to have 25 sites in the UK within the next five years and a similar number operating internationally through development partners.
It plans to open four new UK restaurants in 2004: in the City, West End and Canary Wharf in London and The Trafford Centre in Manchester. It is also seeking European franchisees, particularly in France, Spain and Portugal.
